I just found your new, favorite, summer treat! The best part is there is no ice cream maker necessary and only contains 4 ingredients. Grab a spoon and dig right in!
Yup, it’s that time! The weather is getting warmer and my sweet tooth is kicking into high gear. If you haven’t tried “nice cream” yet, you seriously need to. Nice cream is basically a healthier version of ice cream or frozen yogurt made with frozen bananas. And it’s insanely delicious.
Right now I need all of the easy no bake desserts possible. It’s called stress eating.
We are moving in less than a month.
We have lived here for 15 years and we have collected a lot of stuff over that time. My boys hate to get rid of ANYTHING and I am overwhelmed. Cue the stress eating…
I have been trying to cut back on my carbs and sugars and increase healthy fats to avoid any weight gain. I haven’t been able to meal plan as I typically do which you all know is crucial to weight management. Since I am barely cooking right now, my diet isn’t as clean as I am used to.
I used to make nice cream all last summer. It’s so easy! I make it in my Vitamix and it’s so creamy and refreshing. So far this summer, I know it’s not’s technically summer yet, but I have been craving sweets and I totally forgot about my nice cream!
The beauty of this ice cream (besides the fact that it’s so easy!) is that you probably have all or most of the ingredients already! I always keep very ripe bananas frozen in my refrigerator (you never know when a banana bread craving strikes!) and I always have the other ingredients on hand as well. Pretty much any time you open my refrigerator you will find maple syrup, peanut butter and many varieties of Silk milk.
I chose Silk Unsweetened Vanilla Almond Milk to make this ice cream, but really any variety would be fantastic. Plant-based Silk is so unbelievably creamy, it definitely is the key to how rich and velvety smooth this ice cream is!
Thank goodness this is easy because I definitely have no time for anything these days!
- 3-4 frozen bananas, cut in half
- ½ cup Silk Unsweetened Almond Milk
- 1 tablespoon maple syrup
- ¼ cup natural peanut butter
- ⅓ vegan chocolate chips (optional)
- In a high powdered blender, add frozen bananas, almond milk, maple syrup and peanut butter.
- Start on low setting and slowly increase to higher setting, making sure to scrape the sides.
- Blend until thoroughly mixed.
- Pour into baking dish or container and add in chocolate chips if desired.
- You can eat it right away or freeze in airtight container if eating later.
